Ingredients:
75 g macaroni
1 skinless chicken drumstick or breast
25 g diced carrot
500 ml water
¼ tsp salt
Pepper to taste
2 chilies
1 stalk spring onion
1 stalk coriander
4 shallots
Cooking Method:
- Chop the following ingredients:
- 2 chilies
- 1 stalk spring onion
- 1 stalk coriander
- Slice the shallots and stir fry till golden brown.
- Heat water in a saucepan until it boils.
- Add the macaroni and boil it for 10 -15 minutes or until ready.
- Drain the macaroni and run through with cold water.
- In another saucepan, boil some water and add in the diced carrot and salt.
- When the water starts to boil again, add in the chicken and allow it to cook.
- When chicken is cooked remove it from the saucepan and let it cool, then, shred it.
- Place the macaroni and shredded chicken into the serving bowl, add the hot carrot soup.
- Garnish with chopped chilies, coriander, spring onion and fried shallots before serving.
